In my attempts to live on overall healthier lifestyle I've added cardio and ab workouts to my weekly fitness routine (I'll freely admit that some weeks are better than others when it comes to adhering to my workout schedule). Along with the fitness aspects of my healthy journey, I've also wanted to start eating better on a consistent basis. I'm really good at doing about a week of healthy eating and am pleased with how I'm feeling but then, BLAMO, I'm stuffing my face with lots of sushi, mexican food, and Dirty Shirley's.
I'm hoping that these little energy bites help fuel my body for long runs AND help diminish those afternoon munchies that I get (I'm not alone with getting afternoon munchies, am I?)
These were surprisingly simple to make. The hardest part was actually finding all of the ingredients at my local grocery store. What you'll need:
- 8 oz dried blueberries
- 1/4 cup of slivered almonds
- 1/4 cup of flax seed
- 1 cup of old fashioned oats
- 2 - 3 drops Young Living Lemon Essential Oil
- 2 - 3 tbsp honey
- Food processor
Put the ingredients in the food process in the order listed above. Combine all dry ingredients well then add the Lemon essential oil and honey. Run the processor again to mix everything. If needed, add a little bit more honey to the mixture to get a consistency that will be easily malleable.
Roll the mixture into walnut sized balls. Stick in the fridge to help them set and enjoy! Just be careful that you check your teeth after eating one (or two) - those flax seeds tend to get stuck in the most inconvenient places!
